What if I told you that these breakfast egg rolls are 100% vegan? That's right, I finally made it to this new Portland vegan staple, Chubby Bunny on Southeast Belmont. Chubby Bunny is a self-described secretly vegan breakfast sandwich spot. But today I came for the limited time special, the fully loaded breakfast egg roll. It's just so good. Look at how these were just handcrafted with love, beautifully wrapped, so crispy, not greasy or oily, but definitely crispy. Did you catch that crunch? So good. At this point, I knew I was in for a good time. I also tried vegan hollandaise sauce for the first time. The flavors were definitely right and perfect with the breakfast egg roll. At this point I was a little obsessed and taking a video of everything but check out this texture. And there's tons of outdoor seating so you have plenty of space to enjoy your food.
