Have you ever had root vegetable shell tacos? Little Co's Beach Bites in Capitola, California sure did a twist to Taco Tuesday. The shells are made by thinly slicing your choice of vegetable. They have different options on tacos. We got the baby shrimp with creamy slaw, a black bean and corn salsa one, which was my favorite.
