Action. Okay. We've got Jackman Ranch Filet. We get this by All My Beef from this farm. It's about an hour and a half away. Florida beef is not well known, but this farm does excellent, excellent, excellent. So when we do a dish, it's not starch, veg, sauce, protein. We compose dishes. So the first bite in this dish is a sliver of this truffle pecorino with the tenderloin, a little swath of sauce, and then a slice, a sliver of that grilled artichoke. That's your first bite. Almost every dish that we have is first bite dependent because then you put it in your mouth and you're like, ooh, bon appetit.
