This is Food History. Today we are at the oldest knishery in America, Jonas Schimmel's knish. They have a fantastic variety of flavors to choose from between sweet and savory knishes. Jonas Schimmel began selling knishes on the Lower East Side using a pushcart in the 1890s. Despite the continuous changes to the Lower East Side throughout the decades, the knishery has remained a local fixture. Jonas Schimmel continues to create knishes old-fashioned way by hand wrapping a filling of potato or kasha in a thin layer of dough before baking it and it still tastes fantastic
